Stuffed Chicken



This was my first attempt at stuffed chicken, and I must say it turned out pretty good! I don't have a recipe, per se, but here was my technique if you're interested...

First, pound out the chicken breasts. Placing them in between sheets of plastic wrap spritzed with water helps!...
Coat with EVOO, and freshly cracked salt and pepper.

Insert your stuffing. I used a box of stuffing mix that I had left over from the holidays, four servings of frozen broccoli, slightly crushed, a little water to moisten the mix, and some freshly grated Parmesan cheese.

Evenly divide the mix between 4 pounded chicken breasts. Roll them, and put them seam-side-down in a sprayed 9x11 pan (I love my Pampered Chef stonewear). Crack some extra pepper on the top if you'd like. Cover with foil, and bake at 350 for about 45 minutes, or until the internal temperature of the stuffing reaches 165 degrees.

Cut breasts in half on a diagonal and grate with fresh parmesan cheese before serving.

Shrimp Wonton Soup



The other day we were shopping at Costco, and I sampled some rather salty shrimp wonton soup. Despite its saltiness, it took me back to my days in China...and I SO wanted to eat more, but I couldn't justify spending that much money on just a few servings. So I went home, did a little research, and went to work (with the help of Jon's dad who was in town for a visit)! The end result was pretty tasty! :) It's always a good sign when there are no leftovers, right? :)

French Pressed Coffee

Last weekend we made a quick trip up to Wisconsin so we could have a day trip down to the IKEA in Chicago with Jon's mom and dad. Our realtors from Minnesota promised us money for a new TV once we got into our new house, and we were finally settled in enough to make that happen. Their stipulation was that we needed to get something that we wouldn't normally get for ourselves: a flat screen TV. That meant we needed a new piece of furniture to put it on. And that meant we needed to take a trip to IKEA.

We did find a stand for our TV. Actually, it was a clearanced out dining room buffet that we drilled a few holes in to convert it to a TV stand. It works great, but best of all, we got it for less than half price! More on that in another post another day...

While we were at IKEA, we also picked up their bargain of the day--a french press for coffee. We are big Alton Brown fans, and we recently watched his Good Eats episode on coffee. He explained that the best way to drink coffee is pressed because allowing the boiling coffee to sit in the beans rather than just run through helps them take in better flavor. Well, boy was he right! Man, if you haven't tried this yet, you've got to! Our poor coffee pot has been neglected! And I must say that I don't even have to add as much sugar and cream anymore! It's THAT good! :) Give it a try!



Add the coffee grinds and boiling water to the press. Put the lid on and let sit for 3-5 minutes.



Slowly press the filter down to the bottom...



...and enjoy! :)

Blueberry Oatmeal Cookies

The other day at church I bit into what I thought was a chocolate chip cookie, only to be disappointed that it was merely oatmeal raisin. Don't get me wrong. I love raisins. I love oatmeal cookies. I just don't like raisins in anything that's baked. I'm not even sure why. But anyway, that got me thinking about how to remedy the problem. I love oatmeal in anything. It's full of fiber and good for you. But in order to get my family to eat things that are good for you, it has to have something more appealing. And I couldn't justify just putting in chocolate chips. Then I remembered that we had some dried blueberries left over from some holiday candy making...the rest is history. I know dried blueberries are hard to find, but our Costco and Sams Club both sell them in bulk...it's so worth it! You can do so much with dried blueberries because they don't have the juice of normal blueberries (which would mess up your recipes). It's fantastic! I suggest you give it a try!

So Evan and I got to work making some homemade blueberry oatmeal cookies. Tomorrow we're going to visit my dad (who just had knee surgery) and take him some lunch...so I guess it will be a good test of the recipe! Evan loves helping me cook. Especially when he gets to mix the dry ingredients together. Next to sneaking tastes, it's his favorite job. I hope his future wife appreciates his love of cooking!

I should have taken a picture of the finished product, but we were so busy sampling that I completely forgot! These cookies are by far my new favorite--I'd even take them as a fair trade for my favorite chocolate chip!

Pecans, Pecans

It has always been a bit of a Thanksgiving tradition to receive a nice, shelled bag of pecans from my Grandma. And I have always taken those precious nuts for granted. This year, my grandma is recovering from a broken hip and mysterious back and stomach pains, so the pecans didn't quite come in their usual convenient form. Since we love our grandma and we love her pecans, we've volunteered to help her pick up pecans from her yard several times already this fall. And on this last trip, we got a big bag of our own whole pecans. We decided to be ambitious and shell them together with the help of your average nut crackers and Jon's mom and dad (who came down to visit us for Thanksgiving day). That was a pretty seriously ridiciulous ambition...those things just break the nuts into smitherines! We worked for hours and got practically nowhere with hardly a "whole" nut to be found. It was quite depressing! Jon's parents eventually had to leave, and we sent them home with a few of the "easier to shell" variety of pecans from my grandma's tree in the chicken yard, and we kept the rest of them (an entire plastic WalMart bag-full) for ourselves to work on...in hopes that my Grandparents would lend us the secret to easier shelling.


Thankfully, my grandpa had a spare pecan cracker contraption that he lent us. I was secretly hoping he had a machine at his house that would allow us to dump large quantities of pecans into it and return them cracked, thus leaving us only the painstaking work of shelling them, but we had no such luck. We had to crack the entire bag of pecans with this contraption one at a time...but thankfully the cracking was much easier, faster, and more efficient for turning out "whole" pecan halves.


I'm so relieved to report that the entire bag is finished! Woo hoo! :) (For anyone curious, we ended up with about a gallon and a quart-worth of shelled pecans...) Jon and I ceremoniously threw the last pecan shells onto the fire tonight...never again to take for granted the beautiful pecans my grandma must have slaved over to give us in the years gone by...or to take for granted how wonderful and amazing it is that you can buy so many pecan halves in tact in the stores. They are worth every penny!

Evan's Birthday Party

Evan's real birthday was a month ago, but we've been so busy that his party had to wait a little while. I'm pretty sure he didn't mind having an entire month to celebrate! :) Plus, waiting meant that he got to see his "titi" (auntie) Shana and "gunkle" (unle) Kyle. Our party theme was drums since Evan has been so enamored with the drums for most of this last year, which for me means that his invitations had a drum on them and his cake was shaped like a drum (although fondant might not taste so great, it sure does a lot to help you make cakes into just about anything!). It was a family party (with mostly adults), so I didn't plan any activities, but Evan did manage to get out ALL of his drums and jam with some of his second and third cousins. And it was a great time for the adults to catch up. This was (believe it or not) the first time I had seen half of the people who came to the party since we've been back almost three months now.

And Jon and I were excited to give Evan his birthday gift--finally!--after having it for almost 2 years now! :) A while back we found these kits by Cranium (one of our favorite board games of all times) for building forts. It comes with the fabric, the clips, and styrofoam tubes. The best part is that it is up to your creative genius to build whatever kind of fort or tunnel that you want. Evan and his cousin Isaac did get a little side-tracked playing swords with the styrofoam tubes, but they had a lot of fun after Jon set up an 8 foot tunnel for them to climb through at the end of the party! Little boys are so much energy...and Evan is certainly ALL boy!...We pray that this toy will provide him with entertainment for years to come! :)

Daddy's Day Off

Jon has been craving cinnamon rolls lately, so yesterday on his first "offical" day off, we made them as a family. I have been enjoying my mom's bread machine lately (I think it's got something to do with all the carbs I've been craving with this baby...)--this is my 3rd bread machine use in the two weeks we've been here! :) My family enjoys the goodies, but they accuse me of trying to make everyone fat. But it's funny how the goods disappear within two days! :)
Evan got to help me mix the brown sugar and cinnamon for the rolls. He didn't really understand what it was until I started putting it on the rolled-out dough...then all he wanted to do was snitch up all the extras that fell on the counter... I think he thought he was "helping..." :) Then he helped Daddy make some awesome cream cheese frosting, and once again helped "clean up" all the extra frosting left on the beaters. Needless to say, he loved the finished product even more! :)

After enjoying some freshly baked cinnamon rolls, Evan and daddy got to wrestle and play around. Evan almost didn't know what to do--he was so excited to be able to play with daddy for once! Since Jon's commute to work from my parents' house is nearly an hour long, by the time he gets home from work, we eat supper and then it's time to give Evan a bath and put him to bed. So this was a good change. Evan has been "tackling" daddy for a while now (usually in our bed on Saturday mornings when he gets to be lazy with us), but now he's got his own little "moves" down to tackle anyone laying on the floor! He's got the "ready, set, run!", the "half spin, attack!" and the "three circles, fall down, get up, attack!" It's really funny watching him...he does the same three things all the time. He's such a boy! And his newest game with daddy is to climb on his back for horsey rides. Evan loves this fun time with daddy, and daddy is a trooper for putting up with the rug burn on his knees! :)

Then to end our first "daddy's day off" we took Evan to Saint Louis to watch the Balloon Glow. Tomorrow afternoon is the yearly hot air balloon race, but every year on the night before the race, all of the balloons blow up and light up for everyone to see. For those of you familiar with Forest Park, the balloon glow was on the ball fields near the police horse stables, but it was so crowded that we had to park in the zoo parking lot! So we certainly got our exercise for the day by making the hike up and down all of those hills in the park! :) By the time we finally got there, we had less than a half hour to enjoy the balloons. Evan liked the balloons...from a distance, but up close, I think they were a little bit scarry. He just stared in awe (or maybe fear?) at the big fires going up inside of the balloons. I do think he enjoyed the colors of the big balloons and getting to see all the fun designs (the energizer bunny, one balloon had a cow, one balloon had a goldfish (like the cracker), one balloon was a pepsi can, one balloon was a Wherenberg Theater bag of popcorn, and lots of balloons had pretty squares of colors like a quilt). When we asked Evan which balloon was his favorite, he said, "pa-corn." It was pretty cute. I thought for sure he would tell us the "moo" balloon since he LOVES looking for cows when we're driving...but he surprised us with his answer! :)

We snuck out of the park right before the fireworks, but we did get to watch them from a distance. And on the way home, daddy treated us all to icecream cones! Yummy! :) (And for all you who know that Evan used to only eat the cone without the icecream, you'll be happy to hear that he's decided it's ok to lick the icecream now!) :)
