A few years ago for Christmas, my husband bought me a Vitamix blender. Best. Christmas present. Ever. We enjoy making many things--soups, sauces, smoothies, scrambled green eggs...but since last year for Christmas my husband bought me the dry blade container and we found that we could purchase wheat berries from Whole Foods, so now we grind our own flour for making breads and other things too!

My kiddos came down with the flu two days ago, and as they started to recover and desire to eat again, I wanted to make them something wholesome like crackers. But we didn't have any crackers in the house because we've been cutting out processed foods from our diets. So I got a crazy idea to make homemade graham crackers for the kids.

I spent some time researching different recipes online, and after not finding any for freshly ground wheat, I adapted the one I liked the best from cupcakeproject.com.

Since my friends at @Vitamix on twitter asked, I thought I would share my recipe. Enjoy!

Preheat your oven to 350.

Grind 2 1/4 c wheat berries in your dry blade container, starting at variable 1, increasing to variable 10, turning on high and holding for about 30 seconds or until you don't see any whole berries anymore.

You can do the next part by hand, but this way is so much faster:

Add the freshly ground wheat to a food processor along with:

1/4 c cold unsalted butter cut into tabs
1 egg
6 T organic sugar
3 T raw honey
1 T dark molasses
3/4 t salt
1 t vanilla
2 t water

blend until it forms a ball. If it's not forming a ball, slowly add more water. If you add a bit too much water, add in a little more flour until you get the right consistency. (and if you accidentally added way too much water and then consequently had to add a lot more flour like I did, you just might have to add a little more sugar too. taste the dough at your own risk--mostly because you might come back for more!)

place a sheet of parchment paper on your counter and sprinkle with some finely ground flour

take about 1/3 of the dough, sprinkle with more finely ground flour, and roll out into a thin sheet (aim for about 1/8 of an inch deep)

cut with your favorite cookie cutter (get creative! homemade graham crackers don't have to be in squares!), place on a cookie sheet lined with parchment paper, dust off any excess flour from the rolling process (because as you can clearly see, it doesn't magically disappear during the baking process :)), and add a few pricks with a fork

bake for 8 minutes at 350, flip, and then bake them for another 6 minutes (they might need another minute if you made them thicker)

remove from oven, and immediately transfer to a cooling rack. they will still be soft when you take them out of the oven, but they will harden after a minute or so of cooling.

now go try them! your kids are gonna love them! :)

on our lives since JUNE

Apple Butter--A New Old Family Tradition

It was such a joy to get in on the family secret
and learn the trade!
I loved spending this weekend down with my family
and catching some great shots
that are going to stick in my memory for a long time.

Brittany and Kyle are Married!

Labor Day weekend we headed north
for my husband's cousin's wedding.



We were so excited to have a chance to visit Jon's mom and dad
and even more excited that Jon's mom
felt up to traveling after all of her surgeries
and chemo therapies since her cancer diagnosis
last May. We're proud of her!



Congratulations, Brittany and Kyle!
Your wedding was beautiful!
(and those little decorating balls are still providing
lots of entertainment to my husband and kids!)

Considering that Jon's mom nearly lost her life a few months ago,

Friday Surprise

My husband sacrifices A LOT to make time
to spend with us.
He diligently protects his family time
from too many work and church commitments.
But he's also sacrificed a bit too much when it comes
to having some good, old fashioned guy time.

So I made some for him. :)
About two months ago I began planning a man-day
with our friend, Justin, from our small group at church.
I wanted Jon to have a day completely family-free
doing all the things that he likes to do.

I can't believe I managed to keep it a secret for TWO months.
TWO MONTHS!
If you know me, you know that was quite a feat!
I'm a terrible liar...
and I can't keep a secret from my husband!
He has secret-dar...and he can usually tell when I'm up to something!

Now that I'm done patting myself on the back...
Jon and I made plans to use his pastor's free-pass into the
Brewers and Cards game Friday night.
I even set up babysitting with some of our youth and everything!
Earlier that week Jon told me he was going to go into work
at some point on Friday to make up the extra day we took in WI.

The plan was for Justin and Pastor Tim to come get him around 10.
10 came and Jon was ready to leave!
He was being really sweet...he wanted to stop at a t-shirt place
and get us some Cards gear for the game.
I had to putt every trick in the book to get him to stay in one place...

Things like..."Oh look! Evan and Daddy match! Let me take your picture..."

They finally got to our house as I was sitting Haven on the potty
because it "looked like she had to go."
:)

Whew!

Jon was a LOT confused about why they were here.
Justin said, "You're coming with us."
And Jon said, "No guys. I can't. I have a day planned with my family."
And then I came down stairs and said, "You're going with them!"
"...So does this mean we're not going to the game tonight?"
I think he was slightly disappointed that the date wasn't real,
but the fun he had more than made up for it.

Their morning started off with the Brew Master Brewery Tour.
Behind the scenes.
Samples right out of the kettle.
Jon liked it a lot!

Then they went to a specialty hot dog place for lunch.
(No, not Gus'...)

Headed over to Justin's for some Wii time,
while they waited for the rest of the guys to show up.

They went to Bandana's BBQ for dinner.
And then tee-time was at 8.
Golf at night.
Who knew?!
Thanks to everyone who helped me pull off this big surprise! :)

And so while Jon was gone, Pastor Tim's wife, Beth, came over
and we took the kids to Suson Park.
(After a lunch with Gus.)
I appreciated Beth's company!

Last Bunny Update


I'm pretty sure this is going to be our last bunny update.
Gus Gus WAS waiting for us when we got home from Wisconsin.
But we almost couldn't catch him! :)
Looks like our little baby is all grown up
and ready to leave the nest.
Thanks, Gus-Gus, for providing us some entertainment this spring!
We'll miss you!
